  1. Slice off the tops of the green peppers and carefully scrape out the membranes and seeds.
  2. Bring a large pot of salted water to a boil. Add the hollowed peppers and cook for 3 to 5 minutes to soften slightly.
  3. Drain the peppers well and rinse under cold water to stop the cooking process.
  4. Pat the peppers dry inside and out with paper towels. Sprinkle the inside with salt and pepper to taste.
  5. Preheat the oven to 350ðF (175ðC).
  6. In a skillet over medium heat, cook the ground beef and chopped onion until the meat is browned and crumbled.
  7. Drain any excess fat from the skillet using a colander.
  8. Transfer the beef mixture to a large bowl. Stir in the cooked rice, stewed tomatoes (drained), beaten egg, and shredded cheddar cheese or breadcrumbs.
  9. Stuff the pepper cases generously with the meat mixture and place them upright in a baking dish.
