Directions
-
Preheat oven to 400F (204C) if planning to brown at the end.
-
In a large bowl, combine melted butter, chopped onion, chopped celery, bacon croutons, chicken bouillon, minced parsley, and poultry seasoning. Mix well to create the stuffing.
-
Using a sharp knife, cut the turkey breast into thick slices, cutting from the breastbone to the rib cage but leaving the slices attached to the bone to create a pocket.
-
Season the inside of the turkey breast generously with salt and pepper.
-
Soak a 24x36 inch piece of cheesecloth in dry white wine, then wring out excess liquid so it is damp but not dripping.
-
Lay the soaked cheesecloth on a clean work surface and place the turkey breast on top.
-
Stuff the bread mixture evenly into the slits and pockets of the turkey breast.
-
Fold the ends of the cheesecloth over the turkey to wrap it tightly, securing the stuffing inside.
-
Place a metal rack or trivet in the bottom of a slow cooker. Place the wrapped turkey on the rack.
-
Cover the slow cooker and cook on LOW for 7 to 9 hours, or until the turkey is tender and cooked through.
-
Occasionally pour additional dry white wine over the turkey during cooking to keep it moist.
-
Carefully remove the turkey from the slow cooker and unwrap the cheesecloth immediately.
-
For a browned exterior, transfer the turkey to a roasting pan and bake in the 400F (204C) oven for 15 to 20 minutes.
-
Let the turkey rest for 10 minutes before slicing.
-
Slice the turkey into thick portions, ensuring each slice contains stuffing.
-
Optionally, thicken the drippings from the slow cooker to make gravy.
-
Serve the turkey slices with the stuffing exposed and alongside gravy if desired.

Note
Ensure the turkey is completely thawed before preparing.
Use a food-safe cheesecloth; ensure it is clean and free of lint.
If you prefer not to use alcohol, substitute the white wine with additional chicken broth or water for soaking the cheesecloth.
Check internal temperature with a meat thermometer; turkey should reach 165F (74C) in the thickest part.
The slow cook time can vary depending on the size of the turkey breast (approx. 5 lbs). Adjust time accordingly.
For extra flavor, consider adding minced garlic or dried thyme to the stuffing mixture.
Leftover turkey can be stored in an airtight container in the refrigerator for up to 3 days.
