Note
For a vegan version, substitute eggs with flax eggs (1 tbsp ground flaxseed mixed with 3 tbsp water per egg) and use vegan margarine. Note that texture may be slightly denser.
Madeleines are best enjoyed fresh on the day they are baked. If storing, keep in an airtight container at room temperature for up to 2 days.
To ensure the characteristic "hump" on your madeleines, chill the batter in the refrigerator for 30 minutes before baking. The contrast between cold batter and hot pan helps create the rise.
If you do not have madeleine pans, these can be baked in mini muffin tins for a simpler shape.
