  1. Preheat oven to 350&# 194;°F (175ðC). Spray a 13x9 inch baking pan with nonstick spray.
  2. Soak chopped walnuts in 3 tablespoons of unsweetened apple juice concentrate for 10 minutes to soften slightly.
  3. In a large bowl, sift together 1 teaspoon baking powder, 1/3 cup cocoa powder, and 2 cups whole wheat flour. Make a well in the center.
  4. In a measuring cup, combine 1 1/3 cups unsweetened apple juice concentrate, 1/2 cup oil, 1 egg white, and 1 medium mashed banana. Mix until smooth.
  5. Pour the wet ingredients all at once into the well of the dry ingredients. Stir gently until just combined; do not overmix.
