  1. Wash the sweetbreads thoroughly and soak them in cold water for 20 minutes to remove excess blood.
  2. Drain the sweetbreads and place them in a saucepan with the vinegar, 3 cups of water, and 2 teaspoons of salt.
  3. Bring the liquid to a boil, then reduce heat and simmer gently for 20 minutes.
  4. Remove the sweetbreads from the pot and immediately plunge them into a bowl of ice water for 20 minutes to stop the cooking process.
  5. Measure out 2 cups of the hot cooking liquid (stock) and set aside; discard the remaining liquid.
  6. Peel the membrane off the sweetbreads and dice them into bite-sized pieces.
  7. Melt 2 tablespoons of chicken fat in a large skillet over medium heat and saut the diced onions until golden brown. Remove the onions and set aside.
  8. Melt the remaining 2 tablespoons of chicken fat in the same skillet.
  9. Add the sliced mushrooms to the skillet and cook until they release their moisture and begin to brown.
  10. Mix the potato flour with the reserved stock until smooth, then stir this mixture into the mushrooms.
  11. Cook the sauce over low heat for 5 minutes, stirring constantly, until it thickens.
  12. Add the browned onions, diced sweetbreads, remaining 1 teaspoon of salt, pepper, paprika, and minced parsley to the skillet.
  13. Gently heat the mixture through for 2-3 minutes, being careful not to break the sweetbreads.
  14. Serve hot on toast points or in patty shells.
