These Sweet-and-Sour Baked Beans are a hearty, comforting classic that balances smoky bacon, tangy tomato sauce, and sweet molasses. Slow-cooked until tender and rich, the addition of pineapple chunks and pickles adds a unique, bright acidity that cuts through the richness. Perfect for potlucks, barbecues, or a cozy weeknight dinner, this dish brings together simple ingredients for a complex, satisfying meal that tastes even better the next day.

Ingredients

Directions

  1. Wash the dried navy beans thoroughly and place them in a 3 1/2-quart slow cooker.
  2. Add 6 cups of water to the slow cooker, cover, and let the beans soak overnight.
  3. The next day, cover the slow cooker and cook on the high setting for 3 hours, or until the beans are tender.
  4. Drain the cooked beans and set them aside.
  5. In a 10-inch skillet over medium heat, fry the bacon until crisp.
  6. Remove the bacon from the skillet and drain on paper towels.
  7. In the same skillet with the bacon drippings, sauté the chopped onion, celery, and minced garlic until tender.
  8. Stir in the tomato sauce, chili sauce, molasses, brown sugar, salt, pepper, and Tabasco sauce.
  9. Cook the sauce mixture over high heat until it comes to a boil, then remove from the heat.
  10. Return the slow cooker. Combine the drained beans, tomato sauce mixture, pineapple chunks, chopped pickles, sliced olives, and crumbled bacon.
  11. Stir well to blend all ingredients together.
  12. Cover the slow cooker and cook on the high setting for 3 1/2 to 4 1/2 hours, until the flavors meld and the mixture is thickened.
