  1. Prepare the brine by dissolving 1/2 cup of salt in 2 quarts of water.
  2. Place the gherkins in a large non-reactive container and pour the brine solution over them.
  3. Let the gherkins stand in the brine for 24 hours in a cool place.
  4. Drain the gherkins thoroughly and pack them into a clean crock or large glass jar.
  5. Combine 1 cup of sugar with the vinegar in a saucepan and stir to dissolve.
  6. Place the allspice, celery seed, cinnamon sticks, cloves, and mustard seeds into a cheesecloth bag or spice pouch.
  7. Add the spice bag to the vinegar and sugar mixture.
  8. Bring the vinegar mixture to a boil, then pour it hot over the packed gherkins.
  9. Cover and let stand for 24 hours.
  10. Drain the syrup from the gherkins and return it to the saucepan.
  11. Add 1 cup of sugar to the drained syrup and bring to a rolling boil.
  12. Pour the boiling syrup back over the gherkins.
  13. Cover and let stand for another 24 hours.
  14. Drain the syrup again and return it to the saucepan.
  15. Add the remaining 1 cup of sugar to the syrup and bring to a rolling boil.
  16. Pour the final boiling syrup over the gherkins.
  17. Let stand for a final 24 hours.
  18. Drain the gherkins from the syrup.
  19. Pack the pickles tightly into hot, sterilized jars.
  20. Heat the remaining syrup to a rolling boil and pour it into the jars, covering the pickles.
  21. Remove air bubbles by inserting a non-metallic utensil into the jar.
  22. Add more syrup if necessary to maintain 1/8 inch headspace.
  23. Wipe the jar rims and seal with lids and bands.
  24. Process the jars in a boiling water bath for 10 minutes.

Note
