  1. Preheat oven to 250&# 194;°F (120°C) to keep finished patties warm.
  2. Wash the sweet potato thoroughly; do not peel.
  3. Shred the sweet potato using the fine blade of a shredder or food processor.
  4. Place shredded potato in a large mixing bowl and set aside.
  5. Finely chop the ham, either by hand or by pulsing briefly in a food processor using the puree blade.
  6. Add the chopped ham to the bowl with the shredded sweet potato.
  7. Add salt and ground white pepper to the mixture and mix well until evenly distributed.
  8. Heat 1 tablespoon of butter in a non-stick 6-inch skillet over medium heat.
  9. Add one-quarter of the potato-ham mixture to the skillet.
  10. Press down gently on the mixture to compact it into a patty shape.
  11. Cook for about 4 minutes, or until the bottom is golden brown and crisp.
  12. Flip the hash patty carefully and cook for another 5 minutes until cooked through and browned on the second side.
