  2. Sprinkle the fish strips with 1/2 teaspoon salt and 1/4 teaspoon white pepper, then set aside.
  3. In a medium bowl, combine 1/2 cup water, 1/2 cup distilled white vinegar, 1/3 cup packed brown sugar, 1/4 cup Chinese pickled cucumber (optional), 3 tablespoons ketchup, 1/4 teaspoon salt, and 1/4 teaspoon hot pepper sauce to make the sweet and sour sauce. Set aside.
  4. Cut 1/2 small carrot into matchstick pieces and cut 1 green onion (including the top) into 2-inch slivers.
  5. Place flour, 1 lightly beaten egg, and cornstarch in three separate shallow bowls.
  6. Coat each piece of fish with flour, shaking off any excess.
  7. Dip the floured fish into the beaten egg, then dredge thoroughly with cornstarch.
  8. Let the coated fish rest for 10 minutes.
  9. Set a wok or deep pot in a ring stand and add vegetable oil to a depth of about 2 inches. Heat over high heat until the oil reaches 360&# 194;°F (182°C).
