  1. Preheat oven to 425&# 194;°F (220ðC).
  2. Bake the unbaked pie shell at 425ðF (218ðC) for 10 minutes.
  3. Reduce oven temperature to 350ðF (175ðC) and bake the shell for an additional 35 minutes, or until golden and crisp.
  4. Remove from oven and let the pie shell cool completely.
  5. Wash and trim 2 1/2 lbs of fresh spinach.
  6. Place the spinach directly into a large enameled or aluminum pot without draining.
  7. Add 1/4 cup white wine to the pot.
  8. Cover and steam the spinach over medium heat for 1-2 minutes, or until just wilted.
  9. Drain the spinach thoroughly and mince it very fine.
  10. In the same pot, combine 1/2 cup rose water, 1/3 cup sugar, 1/4 tsp cinnamon, and a generous pinch of salt.
  11. Bring the mixture to a boil, stirring constantly to dissolve the sugar.
  12. Add the minced spinach to the pot and stir to coat evenly.
  13. Simmer over very low heat, stirring occasionally, until all the liquid has evaporated and the mixture is thick.
  14. Remove from heat and set aside to cool completely.
  15. Fill the cooled pie shell with the spinach mixture.
  16. Arrange sliced strawberries decoratively on top of the filling.
  17. Chill the tart in the refrigerator for at least 2 hours.
  18. Just before serving, sprinkle lightly with confectioners' sugar.
