Description

These chilled Szechwan noodles are a vibrant, refreshing dish that balances spicy heat with savory umami and bright acidity. The noodles are tossed in a zesty dressing of sesame oil, soy sauce, rice vinegar, and sugar, then loaded with fresh green onions. This recipe is ideal for hot weather or as a make-ahead side dish, as the flavors meld and improve when allowed to rest. Ingredients

Directions

  1. Bring a large pot of unsalted water to a rolling boil.
  2. Add the noodles all at once and cook for approximately 2 minutes, or until al dente (firm to the bite).
  3. Use chopsticks or two wooden spoons to separate the noodles as they cook to prevent clumping.
  4. Do not overcook the noodles.
  5. Drain the noodles in a large colander and immediately rinse under cold running water until completely cool.
  6. Shake off excess water and let the noodles drain for 15 to 30 minutes.
  7. In a small bowl, combine the sesame oil, soy sauce, rice vinegar, sugar, and chili oil. Mix well until the sugar is dissolved.
  8. Place the drained noodles in a large mixing bowl.
  9. Pour the sauce mixture over the noodles.
  10. Using clean hands or tongs, gently toss the noodles to evenly distribute the sauce, being careful not to break the strands.
  11. Add all but 2 tablespoons of the sliced green onions to the bowl.
  12. Toss again to mix the onions evenly throughout the noodles.
  13. Garnish with the remaining green onions, black sesame seeds, and fresh cilantro if desired.
