Directions
-
Bring a large pan of water to a simmer over a medium heat.
-
Add the bicarbonate of soda and slide in the chopped cactus paddles or the broad beans.
-
Simmer gently for 15-20 minutes, until tender.
-
If you&# 226;ÂÂre using cactus paddles, drain them and rinse them in cold water.
-
Wrap them up in a tea towel and squeeze them tightly.
-
Leave them in the towel for 20 minutes or so, until they are completely
-
cool and any remaining baba (squishy interior of the cactus) has drained away.
-
If youâÂÂre using broad beans, drain them and rinse them in cold water.
-
If they are really young and small, you can leave them in their skins.
-
If they are a bit older, the skins are really unpleasant to eat so you have to
-
make a small
-
cut in the end of each bean and slip out the little bright green bean inside.
-
ItâÂÂs labour intensive and worth it!
-
Put the cactus paddle pieces or broad beans in a serving bowl and
-
add all the remaining ingredients,
-
season to taste and
-
mix to
-
combine .
-
If you like, tightly
-
cover the bowl and
-
place the salad in the fridge for up to 2 days before serving, allowing it to come up to room temperature first.
-
The salad makes a great side dish on any occasion, but is especially good at a taco party.
-
If you canâÂÂt get fresh cactus paddles, buy about 1kg canned paddles - just leave out the cooking part of the method.
-
drain , rinse them off and
-
slice them up before combining them with the
-
rest of the ingredients.
-
cactus paddle or broad bean salad
