  1. Rinse the barley or whole wheat and place it in a large saucepan with 3 cups of water.
  2. Bring the water to a boil, then reduce heat to low and simmer until the grains are tender but still have some bite, about 15-20 minutes.
  3. While the grains cook, whisk the egg, 1 tablespoon of water, and 1 tablespoon of flour in a small bowl until smooth.
  4. Gradually whisk in the yogurt to dilute it, ensuring no lumps form.
  5. In a separate small skillet, melt the butter with the oil over medium heat.
  6. Add the finely chopped onion and sauté until soft, clear, and glossy, about 5-7 minutes.
  7. Stir in the paprika and cook for another minute until fragrant.
  8. Once the barley is cooked, remove the soup from heat and let it cool slightly for 2 minutes to prevent curdling.
  9. Slowly stir the yogurt-egg mixture into the warm barley soup, stirring constantly.
