Description

This Tamale Pie III is a comforting, savory dish that brings the bold flavors of Mexican-inspired cuisine to your family table. Unlike the misleading subtitle, this is not a dessert but a robust main course. It features a rich filling of ground beef simmered with tomato sauce, cumin, oregano, and chili powder, mixed with sweet corn and sharp jack cheese. The filling is nestled in a flaky cornmeal pie crust and topped with a creamy egg-and-cheese mixture that bakes into a golden, slightly crispy lid. Crisp bacon bits and sliced stuffed olives add texture and a salty punch. Perfect for a cozy weeknight dinner or a casual potluck, this recipe delivers deep, aromatic flavors and satisfying texture in every bite. It is simple to assemble with pantry staples, making it a reliable favorite for busy cooks.

Directions

  1. Preheat your oven to 425°F (220°C).
  2. Fry the bacon slices in a large skillet over medium heat until crisp.
  3. Remove bacon from the skillet, drain on paper towels, and break into large pieces. Set aside.
  4. Reserve 1/4 cup of the bacon drippings in the skillet, discarding the rest. Chill the reserved drippings until firm if needed for the pie crust preparation.
  5. In the same skillet with the drippings, brown the ground beef over medium-high heat, breaking it apart with a spoon.
  6. Drain any excess fat from the cooked beef.
  7. Stir in the chopped onions, whole kernel corn, chopped green chiles, cornmeal, oregano, chili powder, salt, black pepper, cumin, and tomato sauce.
  8. Simmer the mixture for 5 minutes to allow flavors to meld, then remove from heat.
  9. Prepare the cornmeal pie crust according to package or recipe instructions and line a 9-inch pie pan with it.
  10. Pour the hot meat mixture into the prepared pie crust-lined pan.
  11. Bake in the preheated oven for 25 minutes.
  12. Meanwhile, in a small bowl, whisk together the egg, evaporated milk, dry mustard, and 1 cup of the grated jack cheese.
  13. After 25 minutes of baking, remove the pie from the oven.
  14. Spread the egg and cheese mixture evenly over the top of the meat filling.
  15. Sprinkle the remaining 1 cup of grated jack cheese over the top.
  16. Decorate the top with the reserved bacon pieces and sliced stuffed olives.
  17. Return the pie to the oven and bake for 5 more minutes, or until the cheese is melted and bubbly.
  18. Remove from the oven and let stand for 10 minutes to firm up before serving.
