Chop the peeled tamarillos and combine them with the initial 1/2 cup brown sugar and 1/4 cup water in a medium saucepan.

Cover the saucepan and simmer over medium heat for approximately 5 minutes, or until the tamarillos are soft and have broken down.

Transfer the mixture to a blender or food processor and blend until completely smooth.

Strain the blended mixture through a fine-mesh sieve into a clean saucepan to remove seeds and pulp, pressing firmly to extract as much liquid as possible.
