Peel jicama and

Combine flour, sugar, salt, celery seed and pepper in pan.

Stir in vinegar gradually.

Add water, mustard and onion.

Cook over medium heat, stir constantly.

Stir small amount into beaten egg yolks; stir egg yolk mixture into the hot mixture.
