  1. Salt to taste Fresh ground pepper to taste Additional fresh bay leaves -(opt)
  2. Melt butter in a saucepan.
  3. Add onion and cook gently 2 minutes.
  4. Stir in flour and cook 1 minute.
  5. Stir in stock and bring to a boil, stirring constantly.
  6. Reduce heat and simmer 2 minutes, stirring constantly.
  7. Add milk and bay leaf, stir well and cook 2 minutes.
  8. Blend mustards smoothly with vinegar and sugar.
  9. Add mustard mixture, salt and pepper to stock mixture and heat through 2-3 minutes.
  10. Remove bay leaf.
  11. Garnish with fresh bay leaves, if desired
