Description

Ingredients

  1. cubed* 3/4 c Green beans,
  2. cut into 2" -- pieces 2 tb Vegetable oil 1 ea Bay leaf 1/4 ts Kalonji seeds 1 c Onion, finely chopped 1 tb Ginger, minced 1 ts Green chile, chopped 1/4 ts Garam masala 2 tb Lemon juice Ghee, optional Bring water to a
  3. boil &
  4. stir in the dal.
  5. Add turmeric, whole chiles & lemon wedge.
  6. Simmer, covered, for 20 minutes.
  7. Stir in the cumin, coriander, salt, sugar & squash.
  8. Simmer another 5 minutes.
  9. Add green beans & simmer a further 15 minutes or until everything is soft.
  10. Stir often to prevent sticking.
  11. Heat oil in a skillet & fry bay leaf & kalonji for a few seconds.
  12. Add onion & fry until richly browned, stirring constantly, do not burn.
  13. Add ginger & chopped chile & stir.
  14. Pour over the dal & mix well.
  15. Simmer for 2 to 3 minutes.
  16. Remove from heat & add garam masala.
  17. Cover & let stand for a few minutes.
  18. Discard lemon wedge, blend in juice & ghee, garnish with cilantro & serve.
  19. Replace squash with sweet potato.
