Ingredients

Directions

  1. Place yeast in a large bowl and pour 1/4 cup warm water over it.
  2. Stir gently and let sit for a few minutes until the yeast is thoroughly dissolved and foamy.
  3. Add olive oil, sugar, salt, tarragon, remaining warm water, and 4 cups of the flour to the bowl.
  4. Beat the mixture until it is thoroughly combined and smooth.
  5. Gradually add the remaining flour to form a moderately stiff dough.
  6. Knead the dough for 10 minutes until it becomes smooth and elastic.
  7. Place the dough in a greased bowl, cover it, and allow it to rise until it doubles in volume.
  8. Turn the dough out onto a lightly floured surface and punch it down to release air.
  9. Divide the dough into two equal portions.
  10. Form each portion into an 8-inch long loaf.
  11. Place the loaves in two greased 9x4-inch loaf pans, or place oval loaves on a greased baking sheet.
  12. Cover the loaves and let them rise again until they are almost double in size.
  13. Preheat oven to 400 degrees Fahrenheit (204ðC).
  14. Bake the bread at 400 degrees for 10 minutes.
  15. Reduce the oven temperature to 350 degrees and continue baking for 25 minutes, or until the bread is nicely browned and sounds hollow when tapped.
  16. Remove the bread from the pans and cool completely on wire racks.
