Note
Storage: Refrigerate immediately after cooling. The mustard will keep indefinitely, though for best flavor, consume within 6 months. The flavor will continue to meld and mellow over time.
Variation: For a milder mustard, extend the soaking time to 24 hours. For a hotter mustard, reduce soaking to just 1 hour.
Ingredient Note: If you do not have white vermouth, you can use additional dry white wine or white wine vinegar in equal measure.
Texture Tip: If the mustard is too thick after simmering, you can thin it with a teaspoon of warm water. If it is too thin, simmer for an additional 2-3 minutes.
