Description

This hearty Tavern Soup is a comforting twist on classic pub fare, combining a slow-cooked vegetable base with a velvety cheddar and beer broth. The vegetables are simmered until tender, then pureed for a smooth texture before being enriched with melted sharp cheddar and light beer. The result is a deeply savory, slightly tangy soup that feels indulgent yet satisfying. Perfect for chilly evenings or casual gatherings, this dish brings the warmth of a cozy tavern to your home kitchen. Its easy to prepare and pairs wonderfully with crusty bread or simple sides.

Ingredients

Directions

  1. Combine celery, carrot, green pepper, and onion in a slow cooker.
  2. Add chicken broth, butter, salt, and pepper to the slow cooker.
  3. Cover and cook on low for 5 to 6 hours until vegetables are very tender.
  4. Strain the mixture, reserving the broth, and puree the cooked vegetables in a blender until smooth.
  5. Return the pureed vegetables to the pot with the reserved broth.
  6. Turn the slow cooker control to high.
  7. Dissolve flour in a small amount of cold water to create a slurry, then stir it into the hot broth mixture to thicken.
  8. Reduce heat to low and add the grated cheddar cheese, 1/2 cup at a time, stirring constantly until fully melted and blended.
  9. Pour in the light beer and stir gently to combine.
  10. Cover and cook on high for 15 to 20 minutes, stirring occasionally, until the soup is hot and creamy.

Note

For a vegan version, substitute the butter with vegetable oil or vegan butter, use vegetable broth instead of chicken broth, and use a vegan cheddar alternative. Note that the original tags listed this as Vegan, but the ingredients include butter, chicken broth, and cheddar cheese, which are not vegan. Please adjust ingredients accordingly if adhering to a vegan diet.

Ensure the beer is at room temperature to prevent the cheese from seizing when added to the hot soup.

Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat gently on the stove, adding a splash of broth or milk if the soup has thickened too much.

For extra flavor, saut the onions and celery in butter before adding them to the slow cooker.
