  1. Vinegar 3 tb Packed light brown sugar 3 tb Minced peeled fresh Gingerroot 4 1-inch thick rib pork chops 2 tb Vegetable oil Finley
  2. chop garlic.
  3. In a saucepan bring soy sauce, mirin or Sherry, and vinegar to a
  4. boil with garlic, brown sugar, and gingerroot, stirring until brown sugar is dissolved.
  5. Transfer marinade to a metal bowl
  6. set in a large bowl of ice and cold water and
  7. cool , stirring occasionally, to room temperature.
  8. In a small dish
  9. arrange pork chops in one
  10. layer and
  11. pour marinade over them, turning chops to
  12. coat well.
  13. Marinate chops at room temperature, turning them once, 15 minutes.
  14. Pour marinade into small saucepan and simmer 5 minutes.
  15. In a 12-inch skillet heavy skillet
  16. heat oil over moderate
  17. heat until hot but not smoking and
  18. cook chops 6 to 8 minutes on each side, or until just cooked through.
  19. Serve chops drizzled with marinade
