  1. Mexican Chopped Bake potatoes at 400 deg.
  2. for 1 hour or until they are tender.
  3. Meanwhile, in saucepan, brown ground beef, onion and garlic.
  4. Drain fat; add beans, salsa and pepper to taste.
  5. Simmer, stirring occasionally, 40 min.
  6. or until thickened.
  7. To serve, cut an "x" in top of each potato.
  8. Fluff potato pulp with a fork and spoon beef mixture over each potato.
  9. Garnish with a dollop of sour cream and sprinkle with chopped green onion and tomato.
  10. Serve with corn chip if desired.
