This authentic Tom Ka Gai is a fragrant, comforting Thai soup that balances creamy richness with bright acidity and gentle heat. The base of coconut milk provides a smooth, luxurious texture, while galanga (or ginger), lemongrass, and lime juice infuse the broth with complex, citrusy aromatics. Tender chicken breasts poach gently in the simmering liquid, absorbing the bold flavors. Ingredients

Directions

  1. Cut the chicken breast into small, bite-sized chunks.
  2. Squeeze the lime juice over the chicken pieces and let them stand while you prepare the other ingredients.
  3. Trim the tough outer layers from the lemongrass, then cut the tender inner stalk into very thin (1/16") diagonal slices.
  4. Slice the galanga (or ginger) into thin circles. Slice the hot chile peppers into thin rings if using.
  5. In a medium saucepan, combine the coconut milk, sliced lemongrass, grated lime peel, galanga slices, and chile peppers.
  6. Bring the mixture to a simmer over medium heat.
  7. Once simmering, add the lime-soaked chicken pieces to the pot and stir to distribute them evenly.
  8. Reduce the heat so the soup stays just below a boil.
  9. Simmer for 12 to 15 minutes, or until the chicken pieces are cooked through and opaque.
  10. Remove the soup from the heat.
  11. Serve immediately, garnished with fresh cilantro leaves.
