Note
Coriander root adds a unique depth of flavor. If unavailable, substitute with 1 tablespoon of fresh coriander seeds (toasted and ground) or use extra cilantro stems.
Ensure your prawns are peeled and deveined before cooking. If using frozen prawns, thaw completely and pat very dry to ensure they sear rather than steam.
Fish sauce is salty; taste the sauce before adding extra salt. The brown sugar provides a nice caramelization, so do not skip it.
