  3. Place the skimmed coconut cream, galangal, and fish sauce into a wok or large saucepan.
  4. Cook over high heat, stirring frequently, until the mixture thickens and becomes oily (about 2-3 minutes).
  5. Add the green curry paste and cook for about 2 minutes, stirring constantly until fragrant.
  6. Add the cubed chicken and cook over medium heat for about 2 minutes, stirring frequently to seal the meat.
