  1. Prepare the marinade by combining salt, garlic powder, white pepper, black pepper, chili powder, red pepper powder, and 1 finely chopped stalk of lemongrass.
  2. Coat 4 whole chicken breasts thoroughly with the marinade mixture and let them soak for several hours or overnight in the refrigerator.
  3. Preheat a grill to medium-high heat.
  4. Grill the marinated chicken breasts until cooked through and lightly charred, then set aside to rest.
  5. Prepare the crispy topping by heating some oil in a deep pan and deep-frying 1 coarse chopped stalk of lemongrass until golden and crispy.
  6. In the same oil, fry several tablespoons of chopped garlic until crispy, then drain and combine with the fried lemongrass and chopped peanuts.
  7. To make the sauce, heat 1 1/2 tablespoons of oil and 2 tablespoons of margarine in a saucepan over medium heat.

For best results, use fresh lemongrass stems. Remove the tough outer layers and only use the tender lower part of the stalk.
