  1. Preheat the oven broiler.
  2. Fry bacon until crisp, then drain and set aside.
  3. Toast six slices of bread and place two slices in each of six ovenproof dishes.
  4. In a skillet, melt butter over medium heat.
  5. Add flour and stir until absorbed to create a roux.
  6. Gradually stir in milk and 6 tablespoons of grated Parmesan cheese.
  7. Cook, stirring constantly, until the sauce thickens; do not allow to boil.
  8. Remove from heat and fold in the beaten egg and whipped heavy cream.
  9. Season the sauce with salt and pepper to taste.
  10. Arrange sliced roast turkey breast on top of the toast in each dish.
  11. Pour the Mornay sauce over the turkey.
  12. Sprinkle with additional grated Parmesan cheese.
