  1. In a large pot, combine the soaked red kidney beans, water, bay leaf, and the whole green bell pepper. Add a generous pinch of salt.
  2. Bring the mixture to a boil, then reduce heat to low. Cover and simmer gently for 1 1/2 to 2 hours, or until the beans are very tender. Add more water if needed to keep beans submerged.
  3. While the beans cook, prepare the sofrito. Heat olive oil in a skillet over medium heat. Add chopped garlic, onion, and diced green bell pepper. Sauté until tender and fragrant, about 5-7 minutes.
  4. Add coarsely chopped tomatoes, red wine vinegar, dry sherry, oregano, cumin, salt, and pepper to the skillet. Cook for 10 minutes, stirring occasionally, until the mixture is thick and jammy.
  5. Once the beans are tender, remove the bay leaf and the whole green bell pepper from the bean pot (discard these).
  6. Add the prepared sofrito, diced potatoes, and diced butternut squash to the pot with the beans.
  7. Stir to combine. Simmer over low heat until the potatoes and squash are fork-tender, about 20-30 minutes.
  8. Taste and adjust seasoning with salt and pepper as needed.
  9. Serve the soup as is for a chunky texture, or blend partially or fully with an immersion blender for a creamy consistency.
  10. Drizzle each serving with a little olive oil before serving.
