Black & white pepper, to -- taste 1/4 c Breadcrumbs

Heat oil & saute garlic, green onions & shittake mushrooms.

Stir in the herbs, vinegar & tamari, & cook for another 3 minutes.

Transfer to a blender or food processor.

Add the chickpeas & puree.

Transfer pureed mixture to a large mixing bowl & mix in the couscous & quinoa.

Stir in the egg replacer & spelt flour.

Season.

Divide mixture into 4 equal portions & shape into patties.

Coat with breadcrumbs.

Place in oven & broil until lightly browned on both sides.

Serve on buns with any fixings you might desire.
