The peppers are slowly sautéed to bring out their natural sweetness before being layered over a crisp, cornmeal-dusted crust. Earthy mushrooms and savory black olives add depth, while the combination of mozzarella and fresh Parmesan creates a rich, cheesy finish. Ingredients

Directions

  1. Slice the red, yellow, and green bell peppers into 1/2-inch pieces.
  2. Heat olive oil in a medium saucepan over low heat.
  3. Add the sliced peppers to the pan and cook slowly until half-done, about 10 minutes.
  4. Drain the cooked peppers on paper towels and reserve the flavored oil.
  5. In a bowl, lightly toss the sliced mushrooms with 1 teaspoon of the reserved oil until coated. Set aside.
  6. Preheat the oven to 425 degrees Fahrenheit (218°C).
  7. Roll out the prepared pizza dough on a floured surface.
  8. Lightly grease the pizza pan with a little oil and sprinkle with cornmeal.
  9. Place the dough in the pizza pan and trim the edges to fit.
  10. Bake the crust for 10 minutes.
  11. Remove from the oven and lightly brush the crust with a little more oil to prevent sogginess.
  12. Sprinkle with half of the mozzarella cheese and spread all the pizza sauce evenly.
  13. Top with the sautéed peppers, tossed mushrooms, and sliced black olives.
  14. Sprinkle with the remaining mozzarella cheese and top with freshly grated Parmesan.
  15. Bake on the oven's bottom rack for 20 minutes, or until the crust is golden and cheese is bubbly.

Note

Storage: Store leftover pizza slices in an airtight container in the refrigerator for up to 3 days. Reheat in the oven at 350°F for 10 minutes to maintain crust crispiness.

Variation: For a more traditional Italian flavor, add 1/2 to 1 cup of crumbled, sautéed Italian sausage (fennel-flavored) along with the peppers. Ensure the sausage is drained well before adding.

Tip: Brushing the pre-baked crust with oil helps create a barrier that prevents the sauce from making the bottom soggy.
