  2. Peel and slice the eggplants into 1/4-inch thick rounds.
  3. Place the eggplant slices on a lightly oiled baking sheet and lightly salt them.
  4. Bake the eggplant slices for 5 minutes until slightly tender but still firm.
  5. Remove the eggplant from the oven and place on paper towels to drain excess moisture.
  6. Peel and seed the tomatoes, reserving the seeds and juice; cut the tomato flesh into wedges.
  7. Slice the buffalo mozzarella cheese into 1/4-inch thick slices.
  8. In a small saucepan, combine 1 tablespoon of unflavored gelatin with 1 cup of the reserved tomato seeds and juice (add water if necessary to reach 1 cup).
  9. Bring the mixture to a boil while stirring constantly, then reduce heat to low and simmer for 1 minute.
  10. Season the gelatin mixture with salt and pepper to taste, then set aside to cool slightly.
  11. Line the bottom and sides of a loaf pan or terrine mold with eggplant slices, reserving some for the top.
  12. Layer half of the tomato wedges over the eggplant base.
  13. Ladle half of the warm gelatin mixture over the tomatoes.
  14. Layer the sliced mozzarella cheese over the gelatin.
  15. Add the remaining tomato wedges on top of the cheese.
  16. Ladle the remaining gelatin mixture over the second layer of tomatoes.
  17. Cover the top with the reserved eggplant slices, folding any excess slices around the edges.
  18. Cover the terrine tightly with plastic wrap.
  19. Place a heavy weight on top of the terrine to press the ingredients down firmly.
  20. Refrigerate for at least 3 hours or until completely set.
  21. Unmold and slice into portions before serving.
