Ingredients

Directions

  1. Preheat oven to 375°F (190°C).
  2. Melt butter in a medium skillet over medium heat.
  3. Add chopped chicken, oregano, salt, and black pepper to the skillet.
  4. Cook and stir for 3 to 5 minutes until the chicken is heated through and well-seasoned.
  5. Remove the chicken mixture from the skillet using a slotted spoon and set aside in a bowl.
  6. Pour vegetable oil into the same skillet to a depth of about 1/4 inch and heat over medium-high heat.
  7. Carefully place one corn tortilla into the hot oil.
  8. Fry for about 1 minute, or until the tortilla is crisp and golden.
  9. Remove the fried tortilla from the oil and drain briefly on paper towels.
  10. Place the drained tortilla on a large baking sheet.
  11. Repeat the frying process with the remaining tortillas, placing each on the baking sheet as they are done.
  12. Spoon an equal amount of the chicken mixture evenly over each fried tortilla.
  13. Top each pizza with 2 tablespoons of chopped tomatoes, 2 tablespoons of sliced green onions, 1 tablespoon of chopped green pepper, 2 tablespoons of pizza sauce, and 1/4 cup of shredded mozzarella cheese.
  14. Bake in the preheated oven for 5 minutes, or until the cheese is melted and bubbly.
  15. Remove from oven and garnish with sliced chili peppers if desired. Serve immediately.
