Finely mince the large onion and garlic clove.

Peel the small potato and grate it finely.

In a large heavy pot, combine the ground pork, minced onion, minced garlic, ground mace, ground sage, grated potato, raisins, and pepper to taste.

Pour about 2 cups of boiling water over the mixture in the pot.

Cover the pot and cook over medium heat, stirring frequently, until the meat is no longer pink and the water has been absorbed, about 30 to 45 minutes. Add more water if necessary to prevent burning, but aim to absorb most of the liquid.

Remove the pot from heat and let the mixture cool completely to room temperature.

Skim off any excess fat that rises to the surface.

Preheat the oven to 400F (200C).

Roll out half of the pastry dough and line a 9-inch pie plate.

Prick the bottom of the crust with a fork and blind bake for 10 minutes.
