  1. Heat a large skillet over medium-high heat. Add the ground pork and finely chopped onion.
  2. Stir-cook the meat and onion until the meat is no longer pink and the onion is softened.
  3. Drain any excess fat from the skillet, then return the meat mixture to the pan.
  4. Add the minced garlic, ground nutmeg, black pepper, crumbled sage, ground allspice, salt, and cloves.
  5. Pour in the chicken stock and stir to combine with the meat and spices.
  6. Bring the mixture to a simmer and cook for about 15 minutes, stirring occasionally.
  7. Stir in the mashed cooked red kidney beans.
  8. Continue to simmer for another 15 minutes, or until the liquid has just evaporated and the filling is thick.
  9. Remove from heat. If making a pie, allow the filling to cool for about 30 minutes before assembling.
