This Trifle Custard Filling is the heart and soul of a classic dessert, offering a luxurious balance of sweetness and richness. Made with a base of half-and-half, egg yolks, and a touch of all-purpose flour, the custard achieves a perfectly smooth, pudding-like consistency. The addition of dark rum and vanilla extract infuses the mixture with deep, aromatic warmth that complements the dairy beautifully. When folded with freshly whipped heavy cream, the filling becomes light yet substantial enough to support layers of cake. It is ideal for entertaining, as it can be prepared ahead of time and chilled, allowing the flavors to meld. Ingredients

Directions

  1. Pour the half-and-half and 1/2 cup of the sugar into a 1.5-quart heavy-bottomed saucepan. Stir to combine.
  2. In a 1-quart bowl, whisk the egg yolks and the remaining 1/2 cup of sugar until smooth.
  3. Add the flour to the egg yolk mixture and whisk vigorously until fully combined and no lumps remain.
  4. Bring the half-and-half mixture to a boil over medium heat.
  5. Remove the saucepan from the heat. Slowly pour half of the hot liquid over the yolk mixture while whisking constantly to temper the eggs.
  6. Pour the yolk mixture back into the saucepan with the remaining hot liquid.
  7. Return the saucepan to medium heat and bring to a boil, stirring constantly with a wooden spoon or heat-proof spatula.
  8. Continue stirring until the custard is thick and smooth, then remove from heat.
  9. Pour the custard into a 3-quart mixing bowl to allow room for folding in cream later.
  10. Cover the surface of the custard directly with plastic wrap to prevent a skin from forming. Pierce the plastic with a knife tip to allow steam to escape.
  11. Refrigerate the custard until completely cool.
  12. Once cooled, stir the vanilla and dark rum into the custard.
  13. Whip the heavy cream in a separate bowl until it reaches soft peaks (Chantilly stage).
  14. Gently fold the whipped cream into the cold custard mixture until just combined.
