  1. Preheat the oven to 180ðC/350ðF.
  2. Pat the sirloin roast dry with paper towels and season generously with salt and pepper.
  3. Place the seasoned roast in a roasting pan and put it in the preheated oven.
  4. Roast for one hour.
  5. Carefully remove the pan from the oven and add the whiskey and red wine to the pan.
  6. Return the roast to the oven and cook for a further hour, basting once more halfway through.
  7. Remove the roast from the pan, place it on a serving dish, and keep it warm.
  8. Pour off excess fat from the meat juices in the pan, adding water as needed to bring the liquid volume to about 15 oz.
  9. In a small bowl, beat the butter into the flour to form a smooth paste.
  10. Gradually add a little of the hot meat juices to the butter-flour paste, mixing well to create a smooth slurry.
  11. Pour the slurry back into the pan with the remaining juices, stirring constantly.
  12. Bring the mixture to a boil, then reduce heat and simmer gently for 2-3 minutes to cook the flour and thicken the sauce.
  13. Taste and correct the seasoning with salt and pepper if needed.
  14. If the sauce is too thick, stir in a little more water to reach desired consistency.
