This rich and indulgent Tropical Fudge combines the deep, earthy sweetness of molasses with smooth semisweet chocolate. The texture is dense and creamy, studded with crunchy Brazil nuts and chewy flakes of coconut for a delightful contrast. It&# 226;€™s a decadent treat that feels both homemade and exotic, perfect for holiday gift-giving or as a special dessert after a heavy meal. The combination of ingredients creates a complex flavor profile that is sweet but not overpowering, with the salt and butter balancing the richness. Ingredients

Directions

  1. In a heavy-bottomed saucepan, combine the sugar, molasses, hot water, butter, and salt.
  2. Place the saucepan over low heat and stir constantly until the mixture comes to a boil and the sugar is dissolved.
  3. Continue cooking the mixture, stirring occasionally, until it reaches the soft-ball stage (240ðF (116ðC)) when tested in cold water.
  4. Remove the saucepan from the heat and immediately add the semisweet chocolate pieces.
  5. Let the mixture stand for about 5 minutes without stirring, allowing the chocolate to begin melting.
  6. Stir the mixture vigorously until the chocolate is completely melted and blended, and the fudge cools to 150ðF.
  7. Stir in 2 cups of the finely chopped Brazil nuts and the flaked coconut.
  8. Pour the fudge mixture into a buttered 8x8x2-inch pan.
  9. Press the remaining 1/2 cup of Brazil nuts into the top of the fudge.
  10. Allow the fudge to cool at room temperature until firm, then cut into squares.

Note

Use a candy thermometer for accurate temperature readings. The soft-ball stage is crucial for the correct texture; if the temperature is too low, the fudge will be too soft, and if too high, it will be hard and grainy.

Ensure the pan is well-buttered to prevent sticking. You can also line the pan with parchment paper for easier removal.

Store the fudge in an airtight container at room temperature for up to 2 weeks. For longer storage, freeze the squares in a single layer, then transfer to a freezer bag for up to 3 months.

Brazil nuts can vary in size; chopping them finely ensures even distribution and a consistent bite. Toasting the nuts lightly before adding can enhance their flavor.

If you don't have a candy thermometer, test the soft-ball stage by dropping a small amount of the mixture into a bowl of ice water. It should form a soft ball that flattens when removed from the water.
