Description

  2. Dust your hands with either confectioners' sugar or cocoa, and roll the mounds into smooth balls.
  3. Place in the freezer for 1 hour or overnight.

  7. Stir until smooth.
  8. If the chocolate is still fairly solid, heat for another 30 seconds.
  9. Stir the mixture until smooth.
  10. If there still seem to be several unmelted pieces of chocolate,
  11. heat again for about 20 seconds, and then

  13. Be careful, as the chocolate should not get too hot.
  14. Stir in other coating ingredient if used (ground coffee or praline).
  15. Coat the truffles: 5.
  16. Remove truffles from the freezer.
  17. Drop a truffle into the chocolate coating.

  20. coat it thoroughly, then lift, letting the excess chocolate drip off.
  21. Return to the baking sheet.
  22. If desired, use a fork to drip a thin, decorative swirl of choclate over the top.
  23. Repeat with the remaining truffles.
  24. Let the truffles set in the freezer for about 1 hour.
  25. Refrigerate in an airtight container for up to 2 weeks or freeze for up to 6 months.
  26. Remove from the freezer about 20 minutes before serving
