Description

These classic chocolate truffles are the epitome of simple elegance. Made with just four ingredients&# 226;ÂÂsemisweet chocolate, heavy cream, butter, and brandyâÂÂthey deliver an intensely rich, smooth, and silky texture that melts instantly on the tongue. Ingredients

Directions

  1. Place chopped semisweet chocolate in a large heat-proof bowl.
  2. Bring heavy cream in a saucepan over medium heat just to a boil.
  3. Pour the boiling cream all at once over the chocolate.
  4. Let sit for 5 minutes, then whisk briskly until the mixture is completely smooth and glossy.
  5. Whisk in the brandy until fully incorporated and smooth.
  6. Refrigerate the ganache for 30 minutes, until thickened and completely cool.
  7. Using a rubber spatula, stir and mash the room-temperature butter into the chocolate mixture bit by bit until completely incorporated.
  8. Return the mixture to the fridge to chill until firm but not hard; it should be chilled enough to hold a shape but still soft enough to mold.
  9. Dust your hands generously with cocoa powder.
  10. Shape small bits of the chocolate mixture into 1-inch balls.
  11. If the mixture softens too much while shaping, chill it briefly in the fridge before continuing.
  12. Roll each ball in cocoa powder or chocolate sprinkles until well-coated.
  13. Place the coated truffles on waxed paper to set.
  14. Store finished truffles in paper candy cups in an airtight container with waxed paper between layers.
