Tuna Lasagna Bundles
Description
These Tuna Lasagna Bundles offer a creative and hearty spin on traditional lasagna. Instead of layering sheets, you wrap tender cooked lasagna noodles around a savory filling of flaked tuna, frozen mixed vegetables, and a creamy low-fat mushroom soup base. The addition of fat-free cheddar cheese adds a sharp, satisfying melt, while egg white and breadcrumbs help bind the filling nicely. This dish is perfect for weeknight dinners when you want something comforting but slightly different. Its easy to assemble, requires minimal cleanup, and delivers a balance of protein and vegetables. The baked bundles hold their shape well and are topped with a warm, cheesy sauce that makes every bite indulgent yet lighter than traditional versions.Ingredients
Directions
-
Preheat oven to 350F (175C).
-
Lightly coat a 2-quart casserole dish with cooking spray and set aside.
-
Cook lasagna noodles according to package directions. Once cooked, rinse under cold running water until cool enough to handle, then drain well.
-
In a small bowl, combine the cream of mushroom soup and skim milk. Set aside.
-
In a large mixing bowl, combine the drained tuna, frozen mixed vegetables, 1/2 cup of the cheddar cheese, egg white, bread crumbs, salt, and about 1/2 cup of the soup mixture. Mix until well combined.
-
Cut each cooled lasagna noodle crosswise into two halves.
-
Spoon an equal amount of the tuna mixture onto the center of each noodle half.
-
Roll up each noodle tightly around the filling.
-
Place the bundles seam-side down in the prepared casserole dish.
-
Pour the remaining soup mixture evenly over the bundles.
-
Cover the dish with foil and bake for 35 minutes, or until heated through.
-
Remove from oven, sprinkle with the remaining 1/2 cup of cheddar cheese.
-
Return to the oven uncovered and bake for 5 more minutes, or until the cheese is melted and bubbly.

Note
Storage: Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in the microwave or oven until warm.
Substitutions: You can substitute canned chicken or turkey for the tuna. Feel free to use fresh chopped vegetables instead of frozen for a fresher texture.
Tip: If the noodles are too hot to handle after cooking, place them on a damp paper towel while you prepare the filling to keep them soft and pliable.
Variation: Add a sprinkle of Italian seasoning or dried basil to the tuna mixture for extra flavor.
