Description

This light and satisfying chowder combines tender potatoes, carrots, celery, corn, and peas with flaked tuna in a creamy skim milk broth. Directions

  1. In large saucepan,
  2. melt butter over medium
  3. heat ;
  4. cook onion, garlic, carrots and celery, stirring, for 5 to 8 minutes or until softened.
  5. Add potatoes, stock, dill and lemon rind; bring to boil.
  6. Reduce heat to medium-low; cover and simmer for 12 to 15 minutes or until vegetables are tender.
  7. Drain tuna, reserving liquid.
  8. Break tuna into large chunks;
  9. add to pan along with reserved liquid, milk, corn, peas, salt and pepper.
  10. Heat through.
  11. Taste and adjust seasoning
