  1. In a medium bowl, flake the drained tuna using a fork.
  2. Add the finely chopped water chestnuts, chopped green onions, soy sauce, sugar, and beaten egg to the tuna.
  3. Mix all ingredients thoroughly until well combined.
  4. Place about 1 teaspoon of the tuna mixture in the center of each wonton skin.
  5. Moisten the edges of the wonton skin with water or beaten egg.
  6. Fold two opposite corners together to form a triangle, pressing firmly to seal.
  7. Pull the right and left corners of the folded triangle down and below the folded edge so they slightly overlap.
  8. Moisten the overlapping corners and pinch them together to seal the wonton completely.
  9. Heat oil or shortening in a deep fryer or large skillet to 350ðF (175ðC).
  10. Fry the wontons 2 or 3 at a time for about 1 minute, or until crisp and golden brown.
  11. Remove wontons from oil and drain on paper towels.
  12. Serve hot immediately.
