Ingredients

Directions

  1. Place turkey drumsticks in a large pot or kettle and add water, chopped onion, bay leaf, salt, and thyme.
  2. Bring the mixture to a boil over high heat.
  3. Cover the pot tightly, reduce heat to low, and simmer until the turkey meat is very tender, approximately 1 1/2 to 1 3/4 hours.
  4. Remove the drumsticks from the liquid and let them cool enough to handle safely.
  5. Remove the skin and bones from the turkey, pulling the meat off in large chunks.
  6. Cut the turkey meat into bite-sized 2-inch pieces.
  7. Strain the remaining cooking liquid and boil it down until it reduces to 3/4 cup.
  8. Drain the canned white beans, reserving 1/2 cup of the liquid from one can and discarding the rest.
  9. In a large bowl, combine the drained beans, the reserved bean liquid, the reduced turkey broth, and tomato paste, mixing well.
  10. Add the chopped turkey pieces and halved smoky link sausages to the bean mixture and stir to combine.
  11. Transfer the mixture into a 2 1/4- to 2 1/2-quart baking dish.
  12. Cover the dish and bake in a preheated 350ðF (177ðC) oven for 45 minutes.
  13. Uncover the casserole for the last 15 minutes of baking to allow the top to brown slightly.
