  1. Finely dice the jalapeo peppers, ensuring seeds are removed if you prefer less heat.
  2. In a medium skillet, heat the bacon fat over medium heat until hot.
  3. Add the finely diced onions and minced garlic to the skillet.
  4. Saut the onions and garlic for 4 to 5 minutes, or until the onions are tender.
  5. Remove from heat and let the vegetable mixture cool completely.
  6. Puree the cooled onion and garlic mixture until smooth.
  7. In a large bowl, combine the diced jalapeos, bread crumbs, milk, salt, and the pureed onion mixture.
  8. Mix these ingredients together until well blended.
  9. In a separate medium bowl, whisk together the egg, egg white, and heavy cream.
  10. Add the vegetable oil and ground turkey to the egg mixture and mix with your hands until combined.
  11. Stir in the finely chopped cilantro and mix well.
  12. Add the bread crumb and jalapeo mixture to the turkey mixture.

  18. While patties bake, place a slice of Monterey Jack cheese and a slice of tomato on each slice of rye bread.
  19. Place the prepared bread slices under a preheated broiler until the cheese is melted and bubbly.
  20. Place one baked turkey sausage patty on top of each grilled bread slice.
  21. Top each sandwich with Southwestern Slaw.
  22. Serve immediately with Black Bean Relish on the side.
