-
Preheat oven to 375°F (190°C).
-
In a skillet over medium heat, cook ground turkey, chopped onion, garlic powder, Italian seasoning, salt, and pepper until turkey is browned and no longer pink, about 5-7 minutes. Break up meat with a spoon as it cooks. Drain any excess fat.
-
In a large bowl, combine the cooked turkey mixture, cottage cheese, squeezed spinach, yogurt, egg substitute, parsley, and half of the grated parmesan cheese. Mix well to create the filling.
-
Boil manicotti shells in salted water according to package directions until al dente. Drain and rinse briefly with cool water to stop cooking.
-
Spoon 1 cup of spaghetti sauce into the bottom of a 9x13-inch baking dish.
-
Fill each manicotti shell with the turkey-cheese mixture using a spoon or piping bag. Arrange stuffed shells seam-side down in the baking dish over the sauce.
-
Pour the remaining 3 cups of spaghetti sauce over the stuffed shells. Sprinkle with the remaining parmesan cheese and the grated mozzarella cheese.
-
Cover dish tightly with foil and bake for 25 minutes. Remove foil and bake for an additional 10 minutes, or until cheese is bubbly and golden.
-
Let stand for 5 minutes before serving to allow shells to set.
