Note
For a richer broth, roast the turkey bones in the oven at 400&# 194;°F (200ðC) for 30 minutes before simmering.
If you do not have turkey bones, you can substitute with chicken carcass or store-bought low-sodium chicken broth.
Add shredded leftover turkey meat back into the soup during the last 5 minutes of cooking to warm through.
Store leftover soup in an airtight container in the refrigerator for up to 3 days or freeze for up to 3 months. Note that noodles may absorb liquid over time; add a splash of water or broth when reheating.
For extra vegetables, add diced carrots and parsnips along with the celery and onion during the initial simmer.
