Turkey Steaks In Wine
Description
This elegant yet simple dish transforms lean turkey breast steaks into a tender, flavorful main course. By pounding the turkey thin and searing it quickly, you ensure a juicy texture rather than dry meat. The white wine sauce, infused with garlic, thyme, and capers, adds a sophisticated Mediterranean flair that pairs beautifully with the poultry. Its perfect for a date night dinner or when you want to elevate a weeknight meal without hours of prep. The result is a savory, aromatic plate that feels restaurant-quality but comes together in under an hour. Serve with crusty bread to soak up the delicious pan juices.Ingredients
Directions
-
Place each turkey steak between sheets of waxed paper or plastic wrap and pound with a meat mallet until about 1/4 inch thick.
-
Sprinkle the turkey steaks with salt and fresh-ground black pepper on both sides.
-
Heat the olive oil and 1 tablespoon of the margarine in a heavy skillet large enough to hold all turkey slices in a single layer over medium-high heat.
-
Add the turkey steaks, minced garlic, bay leaf, and thyme to the skillet.
-
Cook for about 5 minutes, turning once, until the turkey is lightly browned on both sides but still moist inside. Do not overcook.
-
Remove the turkey to a serving platter and cover loosely with foil to keep warm. Leave the garlic, bay leaf, and thyme in the pan.
-
Pour the dry white wine into the hot skillet. Scrape up any browned bits from the bottom of the pan with a wooden spoon.
-
Cook over high heat until the wine is reduced by half.
-
Add the chicken broth and continue to boil until the liquid is reduced by half again.
-
Stir in the remaining 1 tablespoon of margarine, capers (if using), and chopped parsley.
-
Return the turkey steaks to the skillet and toss gently to coat in the sauce. Reheat briefly for 1-2 minutes.
-
Remove the bay leaf before serving. Transfer turkey and sauce to plates.
