  1. Preheat oven to 325&# 194;°F (165ðC).
  2. Clean the turkey by wiping it with a damp cloth, removing any pinfeathers or hairs.
  3. Simmer the turkey giblets in 1 1/2 cups of water for 20 to 30 minutes until tender.
  4. Remove giblets from the liquid, chop them finely, and reserve the cooking liquid.
  5. In a large bowl, combine 8 cups of crumbled cornbread, minced scallions, chopped mushrooms, chopped pecans, drained and chopped oysters, chopped giblets, beaten egg, crushed garlic, minced parsley, powdered savory, pepper, and salt.
  6. Add 5 tablespoons of reserved oyster liquid, 5 tablespoons of giblet cooking liquid, and 1/4 cup of melted butter to the stuffing mixture. Mix thoroughly until well combined.
  7. Loosely stuff the turkey's neck and body cavities with the stuffing mixture.
  8. Wrap any remaining stuffing in aluminum foil.
  9. Skewer the neck and tail openings shut and truss the turkey legs together.
  10. Place the turkey breast-side down on a rack in a large roasting pan.
  11. Place the foil-wrapped stuffing packet in the bottom of the roasting pan.
  12. Rub the turkey generously with about 1/4 cup of softened butter.
  13. Roast the turkey uncovered, basting every 20 minutes with a mixture of the remaining oyster liquid, giblet water, and melted butter.
  14. After 1 1/2 hours, carefully turn the turkey breast-side up.
  15. Continue roasting for approximately 30 minutes per pound, or until the leg joint moves easily and the internal temperature reaches 165ðF (74ðC).
  16. Let the turkey rest for 20 minutes before carving and serving with the stuffing.
