  1. Combine the finely ground Turkish coffee, sugar, and cold water in a cezve (Turkish coffee pot) or a small saucepan.
  2. If using cardamom, add the crushed pods to the mixture.
  3. Place the pot over low heat and allow the mixture to warm slowly.
  4. Stir gently until the coffee is fully dissolved and the mixture begins to steam.
  5. As the coffee heats, a foam will begin to form on the surface.
  6. Just before the coffee reaches a rolling boil and the foam rises to the rim, remove the pot from the heat.
  7. Allow the foam to settle for a moment.
  8. Return the pot to the heat and repeat the process of bringing it to the verge of boiling and removing it two more times to build the foam.
  9. Pour the coffee slowly into a cup, spooning some of the foam on top.
  10. Serve immediately, allowing the grounds to settle at the bottom of the cup.

Note

Use a cezve (also called an ibrik) for the best results. This traditional copper or brass pot has a long handle and a narrow neck to help build the foam.

Do not stir the coffee after it has been poured into the cup, as this will disturb the settled grounds.

Adjust the amount of sugar to your preference: 'az sekerli' (little sugar), 'orta' (medium), or 'tam sekerli' (full sugar).

If you prefer a stronger flavor, you can use slightly more coffee grounds per cup.

Turkish coffee is traditionally served with a glass of water to cleanse the palate before drinking.

For a spiced variation, you can add a pinch of ground cloves or cinnamon along with the cardamom.
